The Bouché family specializes in producing sparkling wines such as Blanquette de Limoux and Crémant de Limoux. They employ the traditional method, which involves two fermentations: the first occurs in vats with the addition of yeast to naturally consume the sugar, and the second takes place directly in the bottle.
The estate cultivates grape varieties including Mauzac, Chardonnay, and Chenin Blanc. The vineyards are situated on both north-northwest facing clay-limestone slopes, preserving the acidity and freshness of Mauzac and Chenin, and on a stony plateau that facilitates optimal maturation of Chardonnay. Grapes are hand-picked to ensure optimal quality, and the alcoholic fermentation is maintained at 16°C in stainless steel vats to preserve freshness. The second fermentation in the bottle lasts at least 36 months, resulting in rounder Champagnes with fine, delicate bubbles. Disgorging occurs every three months, maintaining the freshness and brioche aromas characteristic of their cuvées.
